En deilig pasta salat helt uten kjøtt……. Så  god at den klarer  seg fint helt alene 😉

PENNE OG LINSESALAT

Du trenger til 4 personer:

  • 4 dl vann
  • 1 hønsebuljong terning
  • 300 gr. penne pasta
  • 4 ss olivenolje
  • 1 løk, fin hakket
  • 2 gulrøtter, finhakket
  • 3 selleristenger,fin hakket
  • 4 fedd hvitløk, fin hakket
  • frisk timian
  • 340-400 gr. avrente hermetiske linser

SLIK GJØR DU:

Kok opp pastaen i en egen kjele, mens du varmer 2 ss olivenolje i en egen dyp stekepanne. Tilsett løk, hvitløk, gulrøtter og stangselleri. La det surre over middels varme i 10 min. hell over vann og buljong terningen og la det små koke i 10 min. eller til vannet er kokt inn.

Rør så forsiktig linsene inn å la det bli varme. Smak til med timian  evnt. salt og pepper.

Hell vannet av den ferdig kokte pastaen og ha den i en bolle. Hell den ferdige linse sausen over. Tilsett 2 ss. oliven olje og rør inn i blandingen. Server gjerne med litt revet parmesan.

A delicious pasta salad without meat …….

PENNE AND LENS SALAD

You need for  4 people:

4 dl water
1 chicken bouillon cube
300 gr. penne pasta
4 tablespoons olive oil
1 onion, chopped fine
2 carrots, finely chopped
3 celery stalks, chopped fine
4 cloves garlic, chopped fine
fresh thyme
340-400 gr. drained canned lentils
HOW TO:

Boil the pasta in a separate saucepan,  heat 2 tablespoons olive oil in a separate deep frying pan. Add onion, garlic, carrots and celery. Saute over medium heat for 10 minutes. Add water and bouillon cube and let it simmer for 10 min. or until the water is boiled in.

Stir gently lenses in letting it become hot. Season with thyme, if desirable Salt and pepper.

Pour the water out of the pre-cooked pasta and put it in a bowl. Pour the finished lens sauce over the pasta . Add 2 tbsp. olive oil and stir into the mixture. Serve with a little grated parmesan.
